Fresh from New York, The Hague and Copenhagen, speciality cheese brand Castello's first UK concept store was launched by foodie 'gastronaut', Stefan Gates on Commercial Street, Shoreditch. With over 30 different varieties of cheese available to taste and buy, the store promises an immersive 360° cheese experience like no other.

"This store is a veritable cheese emporium," says Stefan. "And it's not just selling cheese - it's also providing brilliant advice and inspiration no matter what your cheese ocassion - whether as part of a meal, or as a meal in itself."

The store is retailing all your favourite Castello cheeses, cheese accessories, wine, beer, cider as well as Castello cheeses not yet seen in the UK such as Castello Höhlenkäse Classic which is matured in limestone caves 35 metres underground.

Unika, a series of premium artisanal cheeses created in collaboration with some of Denmark's most celebrated chefs, inspired by Nordic culture and found on the cheese menu of the world's best restaurants including Noma, are also available to try and buy.

A fresh deli counter means your desired amount of cheese will be expertly cut and wrapped for you to enjoy at home with friends and there is even a station to build your own hamper with delectable chutneys and delicious drinks pairings, ideal for a cheese lover's Christmas treat.

A perfect pairings bar will serve innovative combinations for cheese, drinks and nibbles - putting to bed the myth that red wine is always the right match for cheese. The bar is open on Thursday and Friday.

As Matt explains, "When you pair cheese with the right drink it can elevate the taste to another level. Contrary to popular belief, red wines just don't work with many cheeses and there is no reason why beers, ciders and spirits can't be successfully paired. The secret of matching cheese with a drink is balance."
